I have yet to make these but found them in my Everyday with Rachael Ray magazine and they sound great and relatively healthy for us all!
Springtime Muffins (Peanut Butter Banana Muffins)
3 cups water
2 Tbls honey
2 bananas (mashed with fork)
1/4 cup peanut butter
3 1/2 cups whole wheat flour
1 teas. baking powder
1 teas. cinnamon
Preheat to 350
whisk together egg, honey, bananas and peanut butter. Still in 3 cups of water, whisk until smooth.
In a separate bowl, stir together flour, baking powder and cinnamon....add to the egg mixture
Spray muffin pans with cooking spray..bake until browned, about 30 mins...cool
I might drizzle some brown sugar/butter mixture too (although it does not say that in the recipe..lol)
