Tasty Thursday - Chocolate Chip Zucchini Oat Cookies

When I get the time I will go back through my Pinterest pages (after all isn't that why we pin things?!) Looking through countless recipes on Pinterest using zucchini, I came across this one.

Zucchini Oat Chocolate Chip Cookies

WHAT? A CC Cookie with Zucchini - could it be true?

I am here to say YES friends you can have your veggie and cookie all in one!

They were light and cake like. I loved the little hint of cinnamon in them and the fact that they have oats makes it a win win in our home.

These are now my go-to cookie for the fall season! Hoping to freeze a batch too so I can bring these babies out in the winter too!!

May 15, 2012 is National Chocolate Chip Day Today is National Chocolate Chip Day! Chocolate chips are an essential ingredient in dozens of delicious baked goods—chocolate chip cookies, chocolate chip pancakes, chocolate chip muffins, chocolate chip brownies, chocolate chip bagels, and many more. You can even find chili recipes that call for these sweet morsels! In the 1930s, Ruth Graves Wakefield created the original chocolate chip cookie at her Toll House Inn in Whitman, Massachusetts. Ruth intended to bake chocolate cookies for her guests, but she ran out of baker’s chocolate. She substituted with chopped up semi-sweet chocolate morsels and discovered that the pieces did not melt into the dough as she expected. Her cookies were an instant hit. Collage Friday and a Video

We have had a good week here in NY. The snow is melting and the signs of spring are everywhere! I am ready for the light coat and to put away my Uggs for the season. Zachary worked on the Women and Children of the Revolutionary War - and some fun Scholastic - Super Science! He is always working on his IPAD playing Scrabble, Words with Friends, Monopoly, Stack the States and Stack the Countries. The girls and I talked about what is happening outside with the plants and animals. Waking up! Sammie also enjoyed this Sofia the First Unit. We had so much fun making our Chocolate Volcano Cakes from our Raddish box this week. Of course some Spring crafting was in order. We made these easy cupcake paper and button flowers pictures.
