Tasty Thursday - Chocolate Chip Zucchini Oat Cookies

When I get the time I will go back through my Pinterest pages (after all isn't that why we pin things?! ) Looking through countless recipes on Pinterest using zucchini, I came across this one.  Zucchini Oat Chocolate Chip Cookies WHAT?  A CC Cookie with Zucchini - could it be true? I am here to say YES friends you can have your veggie and cookie all in one! They were light and cake like.  I loved the little hint of cinnamon in them and the fact that they have oats makes it a win win in our home.   These are now my go-to cookie for the fall season!  Hoping to freeze a batch too so I can bring these babies out in the winter too!! Healthy Snacking: Banana Oat Muffin Tops

I have been cutting the carbs and sugar out of the diet.  Finding healthier alternatives for my family. If you are like me, you LOVE the tops of the muffins and it's the first thing you eat. I have been looking for a recipe without using white or wheat flour.  Banana Oat Muffin Tops Using my muffin top pan (the recipe made 12 large) I mixed all the ingredients together in my food processor and the rest was cake.  They were great warm.  The original recipe uses sugar. I substituted honey as the sweetener so they are not too sweet and paring them up with your coffee or tea is perfect.   I did not use chocolate chips in these. However, I did use these organic free trade chocolate nibs from Theo.  PERFECT crunch!  If not sweet enough, after they come out of the oven you can pour some honey over the top right before you eat, it for some added sweetness. Stretching your food; two recipe ideas!

I t's February and we are a wintry mess again here in NY!  Casserole cooking is on the brain and so is saving at the grocery store.  If you missed my February challenge, please check it all out  HERE. Today I am sharing two recipe ideas that really help me stretch my food budget.  Each week I buy 1 package of organic chicken. Usually boneless, skinless thighs. It runs me about $ 7.50 for a package and there are usually 5 thighs in there.  I am able to stretch that chicken into two full meals plus 2 leftover lunches for the hubby!  NOTE: We use organic ingredients whenever we can.  Meal 1: Creamy Tomato and Chicken Pasta - original recipe found HERE. Best Summer Dessert Ever!

I have finally mastered what I call "Grilled Plantains Ala-mode"   I have tried several different ways of making this Summer time dessert, but it just never tasted quite right.  Well, now it is perfection!   I hope you try it out and enjoy! What you need: A large plantain Caramel Sauce Cinnamon Nutmeg Honey Brown Sugar Prepare the Plantain: Split the Plantain in half length wise, keeping the peel on Brush the open exposed flesh with honey then put on a mixture of brown sugar, cinnamon, nutmeg Preheat the grill: I allowed 10 mins on medium heat Once grill is ready, put plantains on the grill, flesh side UP. Let them sit on the grill until peel is falling off and honey mixture is caramelized. (about 10 mins or so) While on the grill, get our your vanilla ice cream, caramel sauce (of course you can make your own, but I preferred, semi homemade sometimes...lol) The Plantain will be hot..l...

Quick Dinner - pull it together

Do you ever have days where you are racking your brain to figure out SOMETHING different for dinner tonight...instead of the same ol', same ol'..... We love to grill, but when that just isn't possible due to many factors....I love to  try new concoctions to wip together! This one was a hit! Our grocery store had their store made pizza dough on sale for less than $ 1.00 I had some of the Perdue "Short Cuts" ( pre cooked chicken ) 1 cup cheddar cheese 1 Cup crumbled bacon ( we used the Hormel Bacon Bites which is real bacon) 2 Tbls of Ranch dressing You can use light cheese and fat free ranch also. Spread the ranch dressing onto the pizza dough ( after rolled out into a rectangle ) Then spread the chicken over the entire dough on top of the ranch. Add cheddar cheese & crumbled Bacon Roll up and tuck ends.. bake at 350 degrees until golden brown. Cool, slice and partake! Hubby loved it, I loved it, didn't let the kids try it yet, as we wanted it for oursel...

Family Happy Hour Friday - Menu and Ideas

Happy Friday Y'all! We are heading into our Opening of Baseball Season tomorrow and we have two children playing this year....between practices, my hubby coaching 1 team and games...we are busy people!  Not to mention ballet and studies.... One tradition we have been doing for the last 4 years,  in the Spring and Summer months, on Friday's, is have a Family Happy Hour . Instead of the traditional dinner meal on Fridays, I put out snack items for the kids and little fun plates. For the hubby and myself, I put out yummy appetizers and some drinks. Gives us a chance to unwind after a long week and before a busy weekend.  We play in the yard and put on the music.... Last Friday we hosted the First Happy Hour of the year and invited others to partake!  We had a great bonfire and just really enjoyed the families and the fellowship!
