Garden Muffins - Back to School Snack

Today I wanted to share these fabulous muffins that I have been making for the kiddos using our green zucchini and yellow squash from our garden.

Garden Muffins

These turn out so moist and fluffy and freeze like a dream.  The recipe I am sharing will give you 10 good size muffins and 1 large loaf of bread.

  • Ingredients:

  • 3 eggs
  • 2 cups sugar (yes I know it's a lot)
  • 1 cup oil or applesauce
  • 2 cups fresh zucchini, grated
  • 2 cups fresh yellow squash, grated (I used my food processor)
  • 2 teaspoons vanilla
  • 3 cups + 3 tablespoon flour
  • 1 Ā½ teaspoons cinnamon
  • Ā½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup chocolate chips
Directions
Preheat oven to 375 degrees, grease bread loaf pan and 10 cake cups
Mix all ingredients in order, as listed. Mix until well combined.
Once it is well combined pour into bread pan, and bake at 375 for 40-50 minutes.
Insert toothpick to make sure bread is done.  Muffins will only take 15 -20 minutes.

Its our go to snack right now since our garden is showing off with a ton of fresh squash and zucchini.
You might want to try another HUGE hit with the kids that I posted a few years ago.  Zucchini Chocolate Chip Cookies.

Bon Appetit!

National Chocolate Chip Day

May 15, 2012 is National Chocolate Chip Day Today is National Chocolate Chip Day! Chocolate chips are an essential ingredient in dozens of delicious baked goodsā€”chocolate chip cookies, chocolate chip pancakes, chocolate chip muffins, chocolate chip brownies, chocolate chip bagels, and many more. You can even find chili recipes that call for these sweet morsels! In the 1930s, Ruth Graves Wakefield created the original chocolate chip cookie at her Toll House Inn in Whitman, Massachusetts. Ruth intended to bake chocolate cookies for her guests, but she ran out of bakerā€™s chocolate. She substituted with chopped up semi-sweet chocolate morsels and discovered that the pieces did not melt into the dough as she expected. Her cookies were an instant hit. Today, 25% of all the cookies baked in the United States are chocolate chip! To celebrate National Chocolate Chip Day, pick up a bag of chocolate chips at the supermarket and bake something yummy to share with friends and cowor...

The snow is melting and the signs of spring are everywhere!  I am ready for the light coat and to put away my Uggs for the season.   Zachary worked on the Women and Children of the Revolutionary War - and some fun Scholastic - Super Science!  He is always working on his IPAD playing Scrabble, Words with Friends, Monopoly, Stack the States and Stack the Countries. We had so much fun making our Chocolate Volcano Cakes from our Raddish box this week.   Of course some Spring crafting was in order. We made these easy cupcake paper and button flowers pictures. Also using some kitchen sponges (for stamping)  from dollar store to make these beautiful spring cards.  Thursday Science - again going to our Raddish box and finding a cool experiment. ...
