End of Summer update and dealing with loss

To say I have been a slacker on the blog posts is an understatement 8(   Things have gotten out of hand here at the farmhouse with our kitchen renovation, vacations and recently, the death of a dear best friend.  I am just going to show you in pictures how our summer came about..... Visits from my grandbaby and family.. Bonfires... Swimming (early summer - it's been cold in August) Mothers Day and Fathers Day camping.....we found a new place on a river in the Catskills!  LOVING IT! My mother turned 70.. Zachary turned 13... Hubby turned 40... Our 14th wedding anniversary... The garden is producing like crazy.. Nature is showing off!  Sammie worked hard for the last two years and finally achieved her Black Belt in Tae Kwon Do! Our annual trip to Watkins Glen - Finger Lakes region of NY NASCAR fun!  Kitchen renovation that finally wrapped up 100%  mid- August!  We are loving it and cooking up a storm! Field trips...

Garden Muffins - Back to School Snack

Today I wanted to share these fabulous muffins that I have been making for the kiddos using our green zucchini and yellow squash from our garden.  Garden Muffins These turn out so moist and fluffy and freeze like a dream.  The recipe I am sharing will give you 10 good size muffins and 1 large loaf of bread.  Ingredients:  3 eggs 2 cups sugar (yes I know it's a lot) 1 cup oil or applesauce 2 cups fresh zucchini, grated 2 cups fresh yellow squash, grated (I used my food processor) 2 teaspoons vanilla 3 cups + 3 tablespoon flour 1 ½ teaspoons cinnamon ½ teaspoon baking powder 1 teaspoon salt 1 teaspoon baking soda 1 cup chocolate chips Directions Preheat oven to 375 degrees, grease bread loaf pan and 10 cake cups Mix all ingredients in order, as listed. Mix until well combined. Once it is well combined pour into bread pan, and bake at 375 for 40-50 minutes. Insert toothpick to make sure bread is done.  Muffins will only take 15 -
