I don't know about you, but Fall time screams comfort food for my family!
Homemade mac and cheese, (pretty much anything with cheese), apple pies, pumpkins, stews and more...
I would love for you to link back to The Joys of Home Educating so we capture a lot of participation, but it's not necessary...
Pumpkin Cookies
(given to me by a friend almost 10 yrs ago)
2 cups shortening
2 cups sugar
4 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
(I also add 1 teaspoon of pumpkin spice, but not necessary if dont have it)
2 cups of canned solid pumpkin (not pumpkin puree)
GLAZE
3 tablespoons butter (melted)
4 tablespoons milk
1 cup brown sugar
1 cup confectioners sugar
Oven to 350
cream shortening and sugar
add dry ingredients
then add pumpkin
drop teaspoon size dough onto ungreased cookie sheet
bake 10 - 15 mins (when the peaks start to brown take them out)
DONT MAKE GLAZE UNTIL COMPLETED COOLED
then drizzle over cooled cookies
They freeze well and makes A LOT of cookies
These are by far the best cookies I have found to make!
Your turn to share!
