Avocado Ranch Dressing - Summer Recipe

When I hosted my Summer Happy Hour for my gal pals last month I wanted to try a few new recipes out. One that I JUST FELL IN LOVE WITH was this Avocado Ranch Dressing that I used on the crab cakes. I wanted to share! (don't ask me why the "ranch" word is in the name...unsure)

avocado (peeled and pitted)
1/2 cup sour cream
1 clove garlic (grated or finely chopped)
2 Tbls finely chopped chives
2 Tbls finely chopper fresh dill
2 Tbls finely chopper flat leaf parsley
Juice of 1 lemon

Puree all ingredients together....there you go...it's FAB very Summer and Oh SO GOOD! (use Fat Free Sour Cream for your low fat receipe and you can have a little more...lol)

I used on Crab Cakes but you can easliy use a dip, on burgers...oh Tuna Burgers would be great with this!

Found this recipe in the The Book of Burger by Rachael Ray

If you make it would love for you to share you opinion!

This sounds soo good! Love the idea of using it on crab cakes, definitely 'lighter' than a tarter sauce.

I will have to remember this the next time I make fish tacos! This would be a perfect addition!

National Chocolate Chip Day

May 15, 2012 is National Chocolate Chip Day Today is National Chocolate Chip Day! Chocolate chips are an essential ingredient in dozens of delicious baked goods—chocolate chip cookies, chocolate chip pancakes, chocolate chip muffins, chocolate chip brownies, chocolate chip bagels, and many more. You can even find chili recipes that call for these sweet morsels! In the 1930s, Ruth Graves Wakefield created the original chocolate chip cookie at her Toll House Inn in Whitman, Massachusetts. Ruth intended to bake chocolate cookies for her guests, but she ran out of baker’s chocolate. She substituted with chopped up semi-sweet chocolate morsels and discovered that the pieces did not melt into the dough as she expected. Her cookies were an instant hit. Today, 25% of all the cookies baked in the United States are chocolate chip! To celebrate National Chocolate Chip Day, pick up a bag of chocolate chips at the supermarket and bake something yummy to share with friends and cowor
