If you are like me, you LOVE the tops of the muffins and it's the first thing you eat. I have been looking for a recipe without using white or wheat flour.
Using my muffin top pan (the recipe made 12 large) I mixed all the ingredients together in my food processor and the rest was cake.
They were great warm. The original recipe uses sugar. I substituted honey as the sweetener so they are not too sweet and paring them up with your coffee or tea is perfect. I did not use chocolate chips in these. However, I did use these organic free trade chocolate nibs from Theo. PERFECT crunch!
If not sweet enough, after they come out of the oven you can pour some honey over the top right before you eat, it for some added sweetness.
I liked to say I froze some, but I can't lie...the children loved them..
My new "go to" breakfast muffin. No guilt and lots of healthiness in these muffin tops.
